India has been the heart of the global spice trade for over 4,000 years. From the ancient ports of the Malabar Coast to modern-day shipping hubs, Indian spices have travelled across oceans, cultures, and cuisines.
Today, India produces over 75% of the world's spices by volume, with exports reaching more than 150 countries. But what goes into bringing these precious ingredients from farm to table?
Step 1: Cultivation in Ideal Conditions
India's diverse agro-climatic zones provide the perfect conditions for growing a vast array of spices. The Western Ghats, with their rich soil and monsoon rains, are home to some of the finest pepper, cardamom, and vanilla plantations in the world.
Our partner farmers use a combination of traditional wisdom and modern agricultural practices to ensure healthy crops. Many farms are Rainforest Alliance and UTZ certified, guaranteeing sustainable and ethical cultivation.
Step 2: Harvesting and Processing
Timing is everything in spice harvesting. Black pepper is picked when the berries begin to turn red, cardamom pods are harvested just before full ripeness, and turmeric rhizomes are dug up after the leaves turn yellow — typically 7-9 months after planting.
- Black Pepper: Sun-dried for 5-7 days until moisture content drops to 12%
- Cardamom: Cured in smoke-drying chambers at 60°C for 18-20 hours
- Turmeric: Boiled, then sun-dried for 10-15 days before polishing
- Cinnamon: Inner bark peeled, rolled, and dried in shade
Step 3: Grading and Quality Control
Every batch undergoes rigorous testing at our facilities. Our quality control process includes:
- Visual inspection for colour, size, and uniformity
- Moisture content analysis using precision instruments
- Volatile oil estimation through steam distillation
- Microbiological testing in accredited laboratories
- Heavy metal screening for food safety compliance
Step 4: Packaging and Export
We package spices in food-grade materials that preserve freshness and protect against moisture, pests, and contamination. Our packaging options range from 25kg export-grade bags to custom retail-ready consumer packs.
All exports comply with FSSAI, APEDA, and international food safety standards, with full traceability from farm to shipment.
